Happy almost Easter! Here's a healthy start to your busy Easter day – a shake full of goodness. Easter is one busy day for us, as we host Easter brunch at our house. The morning can be quite hectic, not leaving much time to make a wholesome morning meal. Here, carrot juice, fruit and protein-packed tofu make for a fast and nourishing breakfast.
Easter Morning Smoothie
1 cup carrot juice (I used Bolthouse farms carrot juice)
1/3 cup frozen strawberries
1/2 cup frozen mangoes
1/3 cup silken tofu
1 teaspoon goji berries
1 teaspoon chia seeds
1 teaspoon almond butter
make it :
In a blender, combine juice, tofu, strawberries, mangoes, banana, goji berries, chia seeds and almond butter; purée until smooth. Serve immediately.
makes 2 small glasses or 1 big one
