Hey there! Here’s a quick and easy breakfast I like to make when I’m out of ideas in the morning or I’m running late. Not that my mornings are super hectic and stuff, but it happens. My mornings usually revolve around my daughter’s breakfast and school lunch. Once that’s finally accomplished, I don’t have much time left to fix myself some breakfast, and my belly is screaming bloody murder.
A few years ago, while having breakfast with my mom and chatting about various foods and recipes, she suggested grating an apple into my yogurt. Naturally, I had to try it out the next morning and found it to be mighty delicious! I like to add some nuts to this little yogurt bowl for some bite and drizzle some honey on top for a little sweetness. All in all, this is one healthy breakfast – packed with protein, fiber and all kind of vitamins. And a great way to start your day!
Grated Apple Yogurt Bowl with Nuts and Honey
1 container (7 oz) of 2% greek yogurt
1 grated medium apple with skin (Honeycrisp apples are my ultimate favorite)
1 tablespoon of raw honey
a handful of chopped walnuts,
or any kind of nuts you like
A few goji berries
1/4 teaspoon of chia seeds
(or as much as you like)
make it :
With a spoon, whip the yogurt until smooth and creamy. Use a cheese grater to grate the apple over the yogurt and add the nuts. Drizzle with honey and sprinkle the chia seeds and goji berries on top.
