I don't know about you guys, but I love going out for brunch! To me, nothing's better than a spicy Bloody Mary paired with some healthy, down-to-earth comfort food.
One of my favorite spots lately has been Talula's in Asbury Park. I just can't get enough of this place! They have awesome warm biscuits with honey butter, hearty brunch pizza pies, toasts and bowls. My most recent favorite is their avocado toast with pickled veggies and herbs on a slice of sourdough. Simple, but bursting with so much flavor.
Naturally, I don't know Talula's actual recipe to this toast, but I love trying to recreate dishes that have inspired me. I thought of giving this toast an extra dose of protein by adding edamame and chia seeds, as well as Trader Joe's spicy pickled veggies for a little kick. All in all, this makes for a truly vibrant, healthy and super-tasty avocado toast that you can enjoy for brunch, lunch and even dinner. Enjoy!
Kicked-up Avocado Toast with Spicy Pickled Veggies
1 teaspoon chia seeds
1/4 cup edamame, cooked
1/2 avocado, mashed
3 sprigs of parsley, rinsed and dried
3 sprigs of cilantro, rinsed and dried
4-5 small mint leaves, rinsed and dried
1/3-1/2 cup Trader joe's spicy pickled veggies
a squeeze of lime juice
1 slice of good quality sourdough bread, toasted
sea salt and pepper to taste
make it :
Mash the avocado, season with sea salt and pepper and add the lime juice. Spread the mixture over the toasted slice of bread. Sprinkle with the chia seeds and then the edamame. Top with spicy pickled veggies and herbs.
